Apple, pomegranate and baby spinach salad

  • 1 apple of the royal gala variety

  • 1/4 pomegranate

  • 50 g baby spinach

  • 1 tbsp. vegetable oil

  • 1/2 tbsp. balsamic vinegar

  • 1/2 tbsp. water or orange juice

  • 1 handful pumpkin seeds


  1. Wash the baby spinach.

  2. If your apple is organic, you can keep the skin after washing it, otherwise peel it. In any case, remove the core.

  3. In a salad bowl, mix the oil, the balsamic vinegar and the liquid to make a vinaigrette.

  4. Cut your apple (you don't have to make perfect cubes like the picture, just know that it was a pure selection haha).

  5. Put the baby spinach, the apple and the seeds from your pomegranate, into the dressing.

  6. Stir well so that all the ingredients are coated with the dressing.

  7. Top with the pumpkin seeds and eat without delay as the baby spinach tends to cook with the acidity of the dressing.
